REUBENS FOR ST. PATRICK'S DAY

When Reuben’s are made right, they are food for the soul. We always order Reubens for St. Patrick’s Day, but this year after craving them a few times we started making them right at home! With the right ingredients, you can make them super simple.

I felt that there was absolutely no better time to share our recipe with you all, than the week of St. Patrick’s Day! I have shared all of the steps with you below, I would just note as not everyone (especially kids) like Sauerkraut, you can easily leave it off.

What you’ll need:

  • Rye Bread (Marble or beef steak work fine, as long as it is fresh. Try calling your local bakery ahead of time to order a loaf!)

  • Sliced Swiss Cheese

  • 1000 Island Dressing (preferably Kens brand)

  • Corned Beef

  • Sauerkraut

  • Butter

Optional Sides: Chips and/or Pickles

What to do:

To make one sandwich, use two pieces of Rye Bread. Butter one side of each piece of bread and let it start to toast on a skillet.

While the bread is toasting, I warmed up the Roast Beef and Sauerkraut. To warm up the meat, I used our little George Foreman, but you could also use a skillet if that is all you have! I let the meat heat up, being careful not to over cook it and dry it out. In the meantime, I warmed the Sauerkraut in a sauce pan.

Once the bread, corned beef and sauerkraut are all done warming up, I started to assemble the sandwiches! I put Kens Thousand Island Dressing on a piece of bread, Swiss cheese, the corned beef, and place the second piece of bread on top. Once everything is in place, I flipped the sandwich back and fourth to let the sandwich melt together and brown just enough!

Cut in half and serve with your favorite chips and or pickles!

We serve our sandwiches on these trays lined with parchment paper, which gives me major cozy diner vibes.
